設定考えた人、絶対そこまで深く考えてないだろ。そもそも巨大なロボット同士が戦うなんて現実離れした話なんだから、武器にいちいち現実投影して好き勝手言ってんじゃねえよ。

推進剤消費しなきゃできなかった姿勢制御(≒その場で向き変える)が
核融合炉からの電力がある限り手足振り回す事で推進剤消費ゼロで姿勢制御し放題のAMBACの有効性よな。戦闘機動ともなればAMBACだけじゃ悠長すぎて補助が要るけど全部スラスターで賄うよりは格段に推進剤消費を抑えられる。
AMBAC作動肢を人間の四肢と同じように配置して手足の形にする必然性は無いけど
ヒトの動きをモーションデータに取り込む事で開発を短縮できたり
手足にすることでマニピュレーターやランディングギアとして使うという一定の合理性はある。

現代ならリアクションホイールってものがあるけど、1stガンダムの頃は無かった。

グリプスでは標準…というかアナハイムが両陣営とも作ってたか、１年戦争も統合整備計画末期ぐらいから接触回線でトリガ出来た筈。

MS本体と武器側のFCSの同調。レーダー誘導は使えないけどビーム（M粒子じゃない普通のレーザー）ライダー方式は使える、セミアクティブ誘導方式な。ガンダムやGMの頭のトサカだけどプラモ作ってたら判るが、あれも光学センサなんだ。基本は武器側で微修正するけど背面撃ちとかは本体のセンサとアムロの勘で撃ってる。
それと「軍事誌読め」って言うけど実際の戦闘機の兵装システムをパイロンを介したミサイル発射プロトコルは結構バラバラ。ただ電気流して点火するだけのものからミサイルとプロトコルのハンドシェイクとってから目標データを転送するものまで色々、当然バスの本数も違う。
さすがに指じゃなくて穴に棒を突っ込むだけでもいいけど「取り敢えず動かす」為に引き金は実装したとは思う。
